  • 2 tablespoons oil (or water for oil-free)
  • 1 large onion (diced)
  • 3 large carrots (chunky pieces)
  • 2 ribs celery (diced)
  • 5 cloves garlic (minced)
  • 1 medium rutabaga (cut into chunky pieces)
  • 4 large potatoes (cut into chunks)
  • ¼ head green cabbage (shredded)
  • 4 cups vegetable stock
  • ¼ cup soy sauce
  • Fresh herbs: thyme and rosemary

Instructions

  1. In a large pot over high heat, add the oil and sear your choice of vegan beef or portobello mushrooms until golden; set aside.
  2. Reduce heat to medium and sweat onions, carrots, and celery until softened.
  3. Add garlic and cook for 30 seconds before mixing in flour.
  4. Gradually add broth while stirring continuously to avoid lumps.
  5. Combine remaining vegetables and spices; stir well.
  6. Bring to a boil, then reduce heat to simmer uncovered for about 45–50 minutes.
  7. Add back seared protein before serving.
