  • 9 Roma tomatoes
  • 3 tbsp extra virgin olive oil
  • 1 yellow onion
  • 4 garlic cloves
  • 1 tbsp fresh thyme
  • 1 tsp Kosher salt
  • ½ tsp ground black pepper
  • 1 can San Marzano tomatoes (28 oz)
  • 1 cup fresh basil
  • 2 cups chicken stock
  • 2/3 cup heavy cream

Instructions

  1. Preheat oven to 375°F. Spread sliced Roma tomatoes on a baking sheet, drizzle with olive oil, and sprinkle with salt and pepper. Roast for about one hour until caramelized.
  2. In a large pot, heat olive oil over medium-high heat. Add diced onion and sauté for five minutes until translucent.
  3. Stir in minced garlic and thyme; sauté for another minute.
  4. Add crushed San Marzano tomatoes, chopped basil, and sugar to the pot. Simmer for ten minutes.
  5. Incorporate roasted tomatoes and chicken stock; simmer for thirty minutes.
  6. Purée the soup using an immersion blender until smooth.
  7. Stir in heavy cream until combined and serve hot.
