  • 1 tablespoon maple syrup (optional)
  • ½ teaspoon vanilla extract
  • 200g all-purpose flour
  • 2 teaspoons baking powder
  • 3 teaspoons pumpkin spice
  • 100g powdered sugar
  • 2 tablespoons milk
  • 2 tablespoons maple syrup

Instructions

  1. Preheat your oven to 175°C (347°F). Grease and flour a small springform pan (20-22 cm).
  2. In a large mixing bowl, beat the eggs and sugar until light and fluffy.
  3. Gently fold in the coconut oil, pumpkin puree, vanilla extract, and optional maple syrup.
  4. In another bowl, combine flour, baking powder, and pumpkin spice. Gradually add to the wet mixture until just combined.
