Ingredients

Scale
  • ¼ cup packed light brown sugar
  • 2 tbsp pumpkin puree
  • ½ cup warm water
  • 2 double shots of blonde espresso
  • Cold oat milk, to taste
  • Ice cubes

Instructions

  1. In a saucepan, whisk together brown sugar, pumpkin puree, cinnamon sticks (or pumpkin pie spice), and warm water. Simmer for 2-3 minutes until slightly thickened.
  2. Remove from heat and stir in vanilla extract and maple extract if desired. Strain the syrup through a fine sieve for a smoother texture.
  3. Let the syrup cool, then store in an airtight container in the fridge for up to a week.
  4. In a jar, combine one double shot of espresso with 1-2 tablespoons of pumpkin syrup and ice cubes. Shake vigorously for 20-30 seconds until frothy.
  5. Pour into a glass over fresh ice and top with cold oat milk according to preference.
  6. Dust with extra pumpkin pie spice before serving.
