  • 2 cups all-purpose flour
  • 1 1/2 cups rolled oats
  • 1 cup unsalted butter, melted
  • 1 cup packed brown sugar
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 cups pumpkin puree
  • 1/2 cup granulated sugar
  • 1/4 cup brown sugar
  • 2 large eggs
  • 1 tablespoon pumpkin pie spice
  • 1 teaspoon vanilla extract
  • 1/2 cup chopped walnuts (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare your baking dish by greasing it or lining it with parchment paper.
  2. In a large bowl, mix together the flour, oats, brown sugar, baking soda, and salt. Stir in the melted butter until combined.
  3. Press about two-thirds of the mixture into the bottom of the prepared baking dish to form the base layer.
  4. In another bowl, whisk together the pumpkin puree, granulated sugar, remaining brown sugar, eggs, pumpkin pie spice, and vanilla extract until smooth.
  5. Pour the pumpkin mixture over the base layer and spread evenly.
  6. Sprinkle the remaining crumble mixture on top and add chopped walnuts if desired.
  7. Bake for 30–35 minutes until golden brown. Allow to cool before slicing into squares.
