  • 12 oz orzo pasta
  • 4 oz feta cheese, crumbled
  • 1 cup cherry tomatoes, halved
  • 1 cup baby spinach, chopped
  • Juice and zest of 1 lemon
  • Extra-virgin olive oil, garlic, and herbs for flavor

Instructions

  1. Preheat the oven to 425°F (220°C). Toss shrimp with olive oil, salt, pepper, oregano, paprika, and lemon zest in a bowl. Spread on a parchment-lined baking sheet.
