  • 1 (16 ounce) package gnocchi (optional)
  • Olive or avocado oil
  • 2 links spicy Italian sausage (or turkey/plant-based sausage)
  • 2 leeks (white part only), thinly sliced
  • 1 fennel bulb, thinly sliced
  • 1 large parsnip, diced
  • 1 medium carrot, diced
  • 1 rib celery, diced
  • Salt
  • Black pepper
  • 1 teaspoon Italian seasoning
  • 4 cloves garlic, minced
  • 1 (28 ounce) can whole tomatoes, chopped
  • 1 (15 ounce) can navy beans, drained and rinsed
  • 6 cups chicken stock/broth
  • 1 cup chopped kale
  • Squeeze of lemon juice

Instructions

  1. If using gnocchi, cook according to package instructions; set aside.
  2. In a large pot over medium-high heat, drizzle olive oil and crumble in the spicy sausage. Brown for a few minutes.
  3. Add leeks, fennel, parsnip, carrot, and celery; season with salt, black pepper, and Italian seasoning. Sauté until tender.
  4. Stir in garlic until fragrant; add chopped tomatoes and navy beans followed by chicken stock/broth. Mix well.
  5. Cover and simmer for about 20 minutes until veggies are tender. Stir in kale and lemon juice before serving.
