  • 8 chicken thighs
  • ½ head cabbage, roughly chopped
  • 4 potatoes, peeled and sliced into ¼-inch rounds
  • 1 medium onion, sliced
  • ½ cup chicken stock
  • 1 ½ teaspoons thyme
  • 1 teaspoon smoked paprika
  • ½ teaspoon salt
  • ½ teaspoon onion powder
  • ½ teaspoon garlic powder
  • ¼ teaspoon black pepper

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a bowl, combine thyme, smoked paprika, salt, onion powder, garlic powder, and black pepper. Rub this mixture evenly over the chicken thighs.
  3. In a large oven-safe pan, sear the chicken in a bit of reserved fat until browned on both sides.
  4. Remove excess fat from the pan and sauté chopped cabbage for 2–3 minutes.
  5. Add sliced potatoes, onions, and chicken stock to the pan; stir to combine.
  6. Return chopped bacon to the mixture for added flavor.
  7. Place the seared chicken on top of the veggies and bake for 45–50 minutes until cooked through.
