  • 3 cups (390g) cake flour, spooned and leveled
  • 1 3/4 cups (350g) granulated sugar
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 12 tablespoons (180g) unsalted butter, room temperature
  • 1/3 cup (80mL) vegetable oil
  • 3/4 cup (180mL) whole milk, room temperature
  • 1 teaspoon white vinegar
  • 1 cup (240g) full fat sour cream, room temperature
  • 1 tablespoon pure vanilla extract
  • 4 large eggs, room temperature
  • 3/4 cup (120g) rainbow jimmies sprinkles

Instructions

  1. Preheat the oven to 350°F (175°C) and prepare two greased 8-inch round cake pans lined with parchment paper.
  2. In a bowl, whisk together the cake flour, granulated sugar, baking powder, baking soda, and salt.
  3. In another bowl, beat the unsalted butter and sugar until light and fluffy; then add in the eggs one at a time.
  4. Mix in the vegetable oil, sour cream, whole milk (with vinegar), and vanilla extract until smooth.
  5. Gently fold in the rainbow sprinkles before dividing the batter between the prepared pans.
  6. Bake for 25-30 minutes or until a toothpick comes out clean; cool completely before frosting.
