  • 1/4 cup sour cream or Greek yogurt

  • 1 teaspoon pumpkin pie spice
  • 1/2 teaspoon ground nutmeg
  • 1 cup all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • Pinch salt (optional and to taste)
  • 1 large egg (for filling)
  • 4 ounces softened cream cheese
  • 1/4 cup granulated sugar (for filling)
  • 3 tablespoons all-purpose flour (for filling)

Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour a 9×5-inch loaf pan.
  2. In a large bowl, whisk together the egg, pumpkin puree, sugars, coconut oil, sour cream, vanilla extract, cinnamon, pumpkin pie spice, nutmeg, flour, baking powder, baking soda, and salt until combined.
  3. Pour two-thirds of the batter into the prepared pan.
  4. In another bowl, beat together cream cheese filling ingredients until smooth; pour over the batter in the pan.
  5. Spread the remaining batter on top of the cream cheese layer.
  6. Bake for about 48 minutes or until golden brown and set in the center.
  7. Cool in the pan for 15 minutes before transferring to a wire rack to cool completely.
