1 tablespoon olive oil
1 small onion, diced
1/2 bell pepper, diced
2 cups fresh baby spinach, chopped
1 1/2 cups cottage cheese
4 large eggs
1 cup shredded cheddar cheese
1/2 cup milk
1/2 teaspoon garlic powder
1 teaspoon Italian seasoning
Salt and pepper to taste
Instructions
Preheat your oven to 350°F (175°C).
Sauté the diced onion and bell pepper in olive oil over medium heat until soft (3–4 minutes). Add the spinach and cook until wilted (2–3 minutes). Season with garlic powder, salt, and pepper.
In a bowl, whisk together eggs, milk, and cottage cheese until smooth.
Fold in sautéed vegetables and shredded cheese along with Italian seasoning.
Grease a 9-inch pie dish and pour the mixture evenly into it.
Bake for 40–45 minutes until golden brown on top and set in the center. Let cool for 5–10 minutes before slicing.
