  • 2 large eggs
  • 1/2 cup milk
  • 1/2 cup light brown sugar, packed
  • 11/2 teaspoons ground cinnamon
  • 1 large apple, peeled and chopped
  • 2 tablespoons brown sugar
  • 3/4 cups confectioners’ sugar
  • 2 tablespoons water
  • 1/4 teaspoon ground cinnamon

Instructions

  1. Preheat your oven to 350°F (175°C) and grease an 8.5 x 4.5 inch loaf pan.
  2. In a bowl, whisk together flour, baking powder, and salt.
  3. Cream softened butter with granulated sugar and vanilla until smooth.
  4. Beat in eggs one by one until combined.
  5. Alternate adding dry ingredients and milk until just mixed.
  6. Combine chopped apples, brown sugar, and cinnamon in another bowl.
  7. Layer half of the batter in the pan, add half of the apple mixture, and swirl gently; repeat with remaining batter and apples.
  8. Sprinkle with cinnamon-sugar topping before baking for 45–55 minutes until golden brown.
  9. Cool before glazing with a mixture of confectioners' sugar, water, and cinnamon.
