  • 2 cups + 1 tablespoon all-purpose flour
  • 2 tablespoons sugar
  • 1 teaspoon salt
  • 10g fresh yeast
  • 3 large eggs
  • 2/3 cup unsalted butter, softened
  • 1 cup whole milk
  • 1 vanilla pod
  • 2 egg yolks
  • 3 tablespoons cornstarch
  • 3/4 cup mini chocolate chips

Instructions

  1. In a stand mixer, mix flour, sugar, salt, and crumbled yeast. Add beaten eggs and knead until smooth. Gradually incorporate softened butter and knead until sticky.
  2. Cover and let rise for about 2 hours or until doubled in size.
  3. Meanwhile, heat milk and butter with the vanilla pod. In another bowl, whisk egg yolks, sugar, cornstarch. Gradually mix in hot milk and cook until thickened into custard.
  4. Roll out dough into a rectangle; spread cooled custard over half and sprinkle chocolate chips. Fold dough over and cut into rectangles.
  5. Let rise again for about 2 hours on a parchment-lined sheet. Brush with beaten egg before baking at 350°F for about 10-12 minutes.
  6. Prepare sugar syrup by boiling water and sugar together; brush over warm brioches.
