  • 2 tablespoons extra virgin olive oil
  • 2 teaspoons apple cider vinegar
  • 4 salmon fillets (about pounds)
  • 2 medium peaches (thinly sliced)
  • 1 tablespoon Dijon mustard
  • Garlic, salt, pepper, and red pepper flakes

Instructions

  1. In a bowl, mix peach preserves, olive oil, apple cider vinegar, Dijon mustard, minced garlic, salt, black pepper, and red pepper flakes.
  2. Marinate salmon fillets in half the mixture for at least 30 minutes.
  3. Preheat oven to 375°F (190°C).
  4. Sear marinated salmon skin-side up in an oven-safe skillet for 2-3 minutes.
  5. Flip salmon skin-side down and add peaches; cook for another 2-3 minutes.
  6. Pour reserved marinade over salmon and peaches.
  7. Bake for 12-15 minutes until the salmon reaches an internal temperature of 145°F (63°C).
  8. Serve garnished with parsley.
