  • 3 oz cooking oil
  • 2 large eggs
  • 1 cup sugar
  • 1 tsp vanilla extract
  • 1 cup pumpkin puree
  • 1 1/4 cups chocolate chips (divided)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a medium bowl, mix together the flour, baking powder, baking soda, salt, cinnamon, cloves, and nutmeg.
  3. In a large bowl, combine the cooking oil, eggs, sugar, vanilla extract, and pumpkin puree until smooth. Fold in one cup of chocolate chips.
  4. Gradually add the dry ingredients to the wet mixture until just combined; avoid overmixing.
  5. Spray an 8"x4"x3" loaf pan with oil spray and pour in the batter. Top with remaining chocolate chips.
  6. Bake for about 50-60 minutes or until a toothpick inserted into the center comes out clean.
