  • 1½ cups fresh apple cider
  • 4 tablespoons cold unsalted butter, diced
  • 2 large eggs
  • 1/3 cup granulated sugar
  • ½ cup brown sugar
  • 1/3 cup light olive oil
  • ¼ cup sour cream
  • 1½ teaspoons baking powder
  • ½ teaspoon baking soda
  • 1½ teaspoons ground cinnamon
  • Pinch allspice
  • 1/4 teaspoon coarse kosher salt
  • 1¾ cups all-purpose flour

Instructions

  1. Preheat your oven to 350°F and prepare a 9” square baking dish.
  2. Boil the apple cider in a pan until reduced by half (about 5 minutes).
  3. In a bowl, whisk together eggs, sugars, olive oil, sour cream, baking powder, baking soda, spices, and salt until smooth.
  4. Gradually add the hot boiled cider to the mixture while whisking.
  5. Fold in the flour gently until just combined.
  6. Pour the batter into the prepared dish and bake for 22-25 minutes or until golden brown.
  7. Let cool slightly before topping with butter and cinnamon sugar.
